Muffins do you really require any introduction to this decadent dessert ? As we all know getting the perfect muffin with eggless blend is something that requires a good recipe. So here is my secret recipe for amazing muffins.

Ingredients

Unsalted butter | 2/3 cup |
Castor sugar | 1/4 cup |
Condensed milk | 1/2 cup |
All purpose flour | 1 cup |
Milk | 1/4 cup |
Vinegar | 1 tea spoon |
Vanilla extract | 2 tea spoon |
Baking soda | 1/2 tea spoon |
Baking powder | 1/2 tea spoon |
Chocolate chips | 1/2 cup |
Salt | 1/2 tea spoon |
Equipment
- One medium sized bowl
- 12 paper cupcake moulds
- Measuring cups
- Measuring spoons
- Cupcake tray or silicon moulds
- Hand/electric whisker
- Spatula
- Ice cream scooper (Optional)
- Oven for baking

Firstly pre-heat oven at 180˚Celsius for 10 minutes.

Take butter (make sure you have butter at room temperature) and sugar whisk them together rigorously until the mix becomes fluffy. The process becomes easy if you have an electric hand whisker never the less manually too its a fun exercise. Make sure your batter looks like -
If you are using salted butter for this process avoid adding additional salt

Add condensed milk to the butter and sugar mix and beat again for about 2 minutes

Take milk in separate measuring cup and add vinegar and baking soda and stir it quickly
If you don’t have vinegar replace it with 4-5 drops of lemon juice, or you can use curd with same measurement
- In butter batter add all purpose flour in batches and keep whisking (do not add the entire flour in one go this could lead to lumpy and bloated batter)add baking powder, vanilla extract and mixture of milk we prepared previously beat the batter for 2 minutes (do not over whisk the batter) the consistency of the batter at the end of this process should be like
- Finally add chocolate chips and with help of spatula mix it making cuts and folds in batter, this is our final batter that is ready to go for baking
- Put the batter in muffin moulds, pour one scoop of batter for each mould (make sure you fill your mould half way allowing it to rise while getting baked)

Tap the tray 2-3 times

Bake our muffins for 30-35 minutes check with tooth pick at the end of duration and make sure it comes clean or else bake for another 5 minutes make sure you keep checking on them for avoiding burnt muffins
